La chirurgie bariatrique [...] attaque l'obésité morbide sur deux fronts. D'une part, l'ablation d'une partie de l'estomac réduit de 40 % la quantité d'aliments qu'il est possible de consommer. D'autre part, la dérivation des enzymes digestives produites par le foie et le pancréas réduit l'assimilation de la nourriture. Comme les aliments et les enzymes digestives entrent en contact plus loin dans l'intestin, à peine 30 % des calories contenues dans les aliments ingérés sont assimilées par l'organisme.
